Oyster Omelette Recipe



INGREDIENTS 
4 large eggs 
3 tbsp oil
1/2 tsp  of fish sauce
Coriander leaves
8 to 10 pcs of fresh oyster 

FOR THE BATTER
90 g tapioca flour
300ml water
A pinch of salt
1 tsp soysauce

METHOD 
1. In a mixing bowl mix all the ingredients for the batter and set aside.

2. In a other bowl beat the eggs and set aside.

3. Wash the oyster and drain then pat dry the excess water with the paper towel. Set aside.

4. In a flat frying pan heat the oil in medium high. Stir again the batter mixture because some of the starch settled at the bottom. Pour in 2 ladles of batter in the pan swirl around to spread the batter around the pan. 

5. Fry until it is crispy on the edge but the middle is soft then pour. Add the half of the beaten eggs wait the egg to be lightly solidly but slightly wet then start to break the combined mixture. Move it on one side of the pan.

6. Add a 1 tbsp of oil then pour in the oyster cook for about 15 sec then mix the batter egg mixture seasoned with fish sauce and pepper then stir. Immediately transfer to a plate and garnish with coriander leaves.
