Meatballs Avgolemono Recipe

- 1 pound ground beef or lamb
- 1/2 cup breadcrumbs
- 1/4 cup grated onion
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- 1 egg, beaten
- Olive oil for frying
- 1 cup long-grain rice

For Avgolemono Sauce:
- 2 eggs
- Juice of 2 lemons
- 2 cups chicken 

1. In a bowl, combine ground meat, breadcrumbs, grated onion, garlic, parsley, salt, pepper, and beaten egg. Mix well and form into small meatballs.

2. Heat olive oil in a pan over medium heat. Brown the meatballs on all sides until cooked through.

3. In a separate pot, cook the rice according to package instructions.

4. In a separate pot, heat chicken broth until hot but not boiling.

5. In a bowl, whisk together eggs and lemon juice until well combined.

6. Slowly pour the egg-lemon mixture into the hot chicken broth, whisking continuously to avoid curdling. Keep whisking until the mixture thickens slightly.

7. Gently add the cooked meatballs to the sauce and let them simmer for a few minutes.

8. Serve the Meatballs Avgolemono over a bed of cooked rice.

9. Adjust salt and pepper to taste.
