Peruvian Chicken with Green Sauce ( Aji Verde) Recipe





Ingredients:

For the Chicken:

• 4 boneless, skinless chicken breasts

• 2 cloves garlic, minced

• 1 teaspoon paprika

• 1 teaspoon cumin

• 1 teaspoon chili powder

• Salt and pepper to taste

• 2 tablespoons vegetable oil

For the Green Sauce:

• 1 cup fresh cilantro leaves (packed)

• 1/2 cup mayonnaise

• 2 cloves garlic

• 1 jalapeño pepper, seeded and chopped

• 2 tablespoons olive oil

• Juice of 1 lime

• Salt and pepper to taste

Instructions:

• In a bowl, combine the minced garlic, paprika, cumin, chili powder, salt, pepper, and vegetable oil. Mix well to create a marinade.

• Place the chicken breasts in a resealable plastic bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 30 minutes (or up to 24 hours for better flavor).

• While the chicken is marinating, prepare the green sauce. In a blender or food processor, combine the cilantro, mayonnaise, garlic, jalapeño pepper, olive oil, lime juice, salt, and pepper. Blend until smooth. Adjust the seasoning to your taste.

• Preheat your grill or a grill pan over medium-high heat. Grill the chicken breasts for about 6-8 minutes per side, or until they are cooked through and have nice grill marks. Cooking time may vary depending on the thickness of the chicken.

• Remove the chicken from the grill and let it rest for a few minutes.

• Serve the grilled Peruvian chicken with the green sauce drizzled over the top or on the side for dipping. You can also serve it with rice, salad, or roasted vegetables.
