1 whole chicken 
1/2 tsp salt
1/2 tsp pepper
1 tsp garlic powder
1 stalk lemon grass
1 large onion
4 pcs cherry tomato
4 pcs calamansi
1/3 cup unsalted butter
1/2 tsp paprika 
3 tbsp olive oil
Fresh pasrley

1. Clean and wash the chicken and pat dry with paper towel.

2. In a small bowl combine the olive oil, butter and parsley.

3. Prick the chicken using the tip of a knife or a fork. Season with salt and pepper and leave for 5 minutes then season with garlic powder and paprika. Set aside for another 5 minutes and drizzle with calamansi juice.

4. Lastly rub the butter mixture all over the chicken and underneath the skin.

5. Put the onion, lemon grass, cherry tomato and the remaining 2 whole calamansi cut it into half.

6. Cover and put in fridge for atleast 3hrs.

7. Bake for 1hr at 170 C.
