Green Mussels Pancake Recipe




INGREDIENTS 
1/2 cup plain flour
1/2 cup potato flour
1 1/2 tbsp fish sauce
1 tsp pepper
3 cloves garlic minced
Spring onion chopped
Coriander chopped
2 eggs
Oil
250 g green mussels ( frozen cooked / fresh)
1 and 1/2 cup water or sprite

FOR THE DIPPING SAUCE
4 tbsp rice vinegar
1 clove garlic minced
1/2 tsp chilli powder or flakes
2 tbsp soy sauce
1 tbsp sugar
1 tsp fish sauce
Spring onion  chopped 

METHOD 
1. Wash the mussels and remove from the shell if using fresh one. If using the frozen one drain it to removed 5je excess water. Then set aside.

2. In a large mixing bowl combine the flour, potato flour, eggs, fish sauce, pepper and water /Sprite.  Mix well  then add the green mussels and the spring onions and coriander. Mix again to be well incorporated .

3. In a frying pan put ojl and heat it in medium high.  Using a icescream scoop get one scoop of the mixture and fry it until golden brown each sides.

4. For the sauce just combined all the ingredients and mix well.
