Spinach Stuffed Chicken Breast










INGREDIENTS
FOR THE CHICKEN BREAST 
 
4 large chicken breast
3/4 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp paprika 
1 1/2 tbsp olive oil

FOR THE FILLING

4 oz cream cheese, cold
2 garlic cloves pressed or minced
1 tbsp mayonaise
1/4 tsp salt
1 1/2 cup baby spinach leaves chopped
1/4 cup mozzarella cheese
1/4 cup parmesan cheese

METHOD
1. Preheat the oven to 425 F.

2. In a mixing bowl, mash together cream cheese,mayonaise and garlic with a pork then stir in the mozzarella, parmesan cheese and chopped spinach until combined.

3. Lay the chicken on a flat surface and cut half way through without cutting all the way through. Stuff each chicken breast with 1/4 of the mixture and seal horizontally with the toothpick. Make sure the chicken can lay flat on the pan.

4. Season the outside of the chicken breast all over with salt,pepper,garlic powder and paprika. 

5. Heat olive oil in a oven proof pan such as cast iron or large bottom skillet over medium heat.Add chicken and Seared  4 minutes per side until golden brown on each side.

6. Flip a second time and immediately transfer skillet to preheated oven. Bake for 10 to 15 minutes. Rest the chicken for 5 minutes before slicing.
