40 Cloves of Garlic Roast Chicken

1 whole chicken
1 tbsp black pepper
1 tsp salt
1 tsp garlic powder
1 tsp dried oregano or rosemary 
3 whole gloves of garlic
2 tbsp calamansi juice or lemon juice

1. Wash the chicken and pat dry with paper towel.

2. Mix all the spices in a small bowl.

3. Put the calamansi juice to the chicken and rub it be sure to put inside cavity also.

4. Smashed the garlic including the thin skin. Use mortal and pestle then set aside.

5. Rub the mix spices to the chicken and underneath the skin including the cavity.

6. Add the smashed garlic inside cavity and underneath the chicken skin.

7. Bake in 180C for 40 mins breast down then another 15 mins breast up.
