Chicken and Chorizo Paella

An authentic-tasting chicken and chorizo paella recipe that conjures up memories of sunny days in Spain.

* 2 medium tomatoes roughly chopped
* 4 tbsp olive oil
* 1 red bell pepper (diced)
* 4 cloves garlic finely chopped
* 1.2 litres chicken stock
* pinch of saffron
* 100 g chorizo (diced)
* 400 g chicken breast (removed skin)
* 3tsp paprika
*300g paella rice
* salt and pepper to taste
* 100 g green peas (frozen)
* 3 boiled eggs
* 50 grams raisin (optional)
* 2 lemons cut into quarters

* Place the olive oil in a large pan and saute the onion for 3mins

* Pour in the chicken and chorizo fry for 2 mins in a medium heat

* Turn down the heat and add the garlic and chilli and paprika cook for another 2 minutes

* Add the red bell peppers,tomatoes,paella rice,saffron ,sal and pepper,chicken stock bring to boil and simmwr in lower heat for 15mins

* Add the frozen green peas and raisin cook for another 2mins

* Lastly stir in the 2 lemins juices from quarters and chopped parley. Cut the eggs into half
* garnished with some parsley then served immediately.
