Hainanese Chicken Rice Recipe




Hainanese Chicken Rice one of Singapore's national dish. Hainanese Chicken Rice is simple yet delicious chicken served with flavorful and aromatic "oily rice" plus some of homemade sauces like chilli sauce, dark soy sauce and ginger dipping. 


INGREDIENTS 
2 -4 pcs of chicken thigh or u can use also chicken breast or whole chicken
3 stalk white part of the spring onion smashed 
4 pcs ginger sliced
5 cloves garlic minced
1 onion roughly chopped
2 cups unsalted chicken stock
2 cups water
2 tbsp oil
1 tsp salt
1 pc cucumber sliced 
1 tomato sliced
For the Chicken Rice
1 cup jasmine rice
1 1/2 cup chicken stock (from the stock on the pot)
1 tbsp oil
2 slice ginger


For Hainanese Chicken Sauce
3 tbsp chicken stock (from the chicken leg stock)
2 tbsp dark soya sauce
1 tbsp Shaoxing wine
2 drops sesame oil
1 tsp sugar

For Hainanese Chicken Chilli Sauce
4 sliced ginger
3 red chilli
Half of lime
1 tbsp chicken stock

METHOD 
1. Wash and clean the chicken. Pat dry with paper towel.

2. In a large pot heat the oil and saute the onion, ginger and spring onion for 3 minutes.

3. Pour in the chicken stock and water. Simmer for 5 minutes then put in the chicken and simmer it for 20 to 30 minutes.

4. Remove the chicken from the pot and put it on a ice water or under running cold water so that the skin of the chicken will be  firm and put it in a strainer or a metal cooking rack.

5. For the rice, heat up the rice cooker and put in the oil then saute the ginger for 1minute then add in the rice stir and pour in the chicken stock and salt. Cook for  10 -13 minutes.

For the soup, strain the chicken stock from the pot and garnish with spring onion.

7. Arrange in a plate and served.
