Pineapple Chicken with Coconut Milk

This recipe is very simple to make and main ingredients are chicken, pineapple and coconut milk.Pineapple Chicken is a Filipino dish modified as "Pininyahang Manok". Main
purpose of coconut milk is to give more 
thickness to the sauce and add some nice aroma to the dish.

500g chicken
1 can pineapple chunks or sliced Reserve the juice
250 ml coconut milk
4 cloves garlic minced
1 onion finely chopped
1 big tomato diced
1 bell pepper sliced
1 big carrot sliced
3 tsp brown sugar
1/2 c pineapple juice
3/4 c water

1. Wash the chicken and pat dry with paper towel. Season with salt and pour in the juice from the pineapple chunks and sugar.Marinate for at least 2 to 3 hours.

2. In a skillet over medium heat add 3 tbsp of oil and pan fry the chicken then set aside.Reserve the marinate.

3. In same skillet add another 2 tbsp of oil then saute the garlic and onion for 2 minutes or until the onion soften already.

4. Add in the chicken, marinade juice, tomato, water and 1/2 c pineapple juice. Simmer for 20 minutes then add in the bell pepper and coconut milk simmer for about 10 minutes or until the sauce reduced and thickened already.

5. Transfer to a serving plate and serve with rice.
