Chicken Afritada Recipe


Chicken Afritada is a Filipino dish that is cooked in tomato sauce with bell pepper, carrots, and potatoes.
This dish is not only tasty but best served with rice, as we all know that Filipino people love to eat with rice.

INGREDIENTS
500g chicken
5 cloves garlic minced
1 onion finely sliced
1 green bellpepper scliced
1 red bell pepper sliced
2 carrots  sliced
2 potatoes quartered
3 tbsp fish sauce
Pepper
Oil
3/4 cup frizen greenpeas
3 tbsp tomato paste
1 small can tomato sauce
2 tbsp aoysauce
Egg optional

METHOD
1. Wash the chicken then set aside.

2. In a wok heat up the oil and saute the onion and garlic for about 3minutes.

3. Add in the chicken stir when there is no pink in color pour in the fish sauce stir again and simmer for 10mins. Pour in the tomato sause stir well add 2 cups of water cover and simmer for 6 minutes. Add in the carrots and potatoes.Put in the tomato paste and  stir it well to be well combined,simmer for 20 minutes or until the sauce thicked already.

4.Add the bell peppers, frozen greenpeas and season with pepper and salt stir well.Cook for another 3minutes.Add in the  boiled eggs.

5. Transfer to a serving bowl and serve with rice.
