Moroccan Lentil Soup






I really love this Moroccan Lentil Soup.It's very thick and creamy,and its hearty and healthy.You will be amazed by the flavoured,warm and fragrant moroccan spices of this soup.I discover this soup by a Moroccan friend.

INGREDIENTS
1 cup lentils
300 ml chicken stocks
1 large carrots chopped into small cubes
3 tbsp tomato paste
1/2 tsp salt
1/2 tsp pepper
1/2 tsp cayenne pepper
1 tsp paprika
1tsp ginger powder
1 tsp cinnamon powder / 1 stick cinnamon
1 tsp coriander powder
1 tbsp cumin powder
2  tomato quartered
 Fresh coriander leaves optional
1/2 tsp turmeric powder
5 cloves garlic minced
1 big onion finely chopped
350 ml chicken stock
3 tbsp oil


METHOD
1. Wash the lentils and soak in water for 20 mins.

2. Meanwhile, in a deep cooking pot heat the oil in medium heat.Saute the onion for 2 minutes then add the garlic cook for 1 minute and then add all the spices.Stir it well then cook until it gets aromatic then add in the tomatoes cook for 3 mins.

3. Now drain the lentils the pour in to the pot stirring it well cook for 2 mins then pour in the chicken stock.Cover and simmer for 20 minutes then add in the carrots.Cook for another 15 minutes or until the lentils soften already season with salt and pepper.

4. Transfer to a serving bowl garnish with coriander leaves
