Chicken Morcon recipe



Morcon is a dish that Filipino serve during special occation.This recipe is made up of chicken or beef which is flatten and rolled with lots of fillings inside and cook with sauce that has a minced pork liver or chicken liver or liver spread to make the sauce more tastier.

INGREDIENTS
3 pcs chicken breast
3 eggs hard boiled
1 red bell pepper cut into strips
6 pcs ham (any kind defense on your preference)
Sausage or hotdog
Slice cheese
Salt 
Pepper
1/4 cup oil
italian seasoning
3 tbsp calamansi juice
1/3 cup soysauce
1 carrots cut into strips

FOR THE SAUCE
1 cup tomato sauce
2 cups chicken or beef broth
1/2 tomato paste
1/2 cup flour
1/2 cup liver spread or minced chicken liver
1 bayleaf
1/2 tsp garlic powde
1 onion finely chopped
3 cloves garlic minced

METHOD
1. Pound and flatten the chicken breast.Set aside.

2. Marinate the chicken in garlic powder, calamsi juice and soysauce for about 1 to 2 hours.

3. Remove the chicken from the marinate and put in a flat surface.Then place into the center of the chicken the 2pc of ham, cheese boiled egg, carrots, bellpepper.Then season with italian seasoning and then roll the chicken and close it by uaing a kitchen string.

4.Dredge the chicken roll into the flour and fry until turns to brown.

5. In a pot heat the oil and saute the onion and garlic for 3 mins then put in the minced liver saute for 3mins. Add in the lemon soysauce marinate stir then pour in the broth and simmer for 10minutes. Add in the tomato sauce stir again simmer for 5 minutes.Add the tomato paste stir then add in the chicken roll and simmer for 15 to 20 minutes or until the sauce thickened already.Season with salt and pepper to taste.

NOTE
If using liver spread, you don't need to saute it just add it after you put in the tomato sauce.
