Prawn Fried rice



The best way to treat your left over rice is to convert it to a friedrice.This easy friedrice is full of Asian flavour.A combination of garlicky,spicy,and a little bit of swertness.

INGREDIENTS
150g shrimp or prawn
1/2 tsp salt
1/2 tsp pepper
200 g left over rice or cooked rice
1 cup frozen mix veggies
1/3 cup light soysauce
4 cloves garlic minced
1 green long chillie slice
3 spring onions
3 eggs lightly beaten
3 tbsp oil
Coriander leaves optional
Fried onion  optional

METHOD
1. Clean the prawn remove the scale and head and tail.

2. In a wok heat the oil in medium heat.Cook the eggs until it turns to slightly scrambled then set aside.

3. In same wok heat again the remaining oil in medium high heat  and saute the garlic till fragrant or turns to golden brown.Add in the prawn stir it and cook until turns to pink in color then add in the mix veggies stir cook for 2mins.
Pour in the left over rice or cooked rice stirring well to combined cook for 4mins and season with salt continously stirring and add in the light soy sauce the scrambled egg,pepper and chillie cooked for another 6 minutes.

4. Transfer to a serving plate and garnish with coriander leaves and spring onion.You can also put fried onion on top.
