Eggplant Omelet (Tortang Talong)


Eggplant Omelette or we called it Tortang Talong in Philippines, is a very easy and healthy dish.You can add some minced pork or onion and tomato on it..It's nice to serve with Banana ketchup or Tomato ketchup.

INGREDIENTS
2 pc eggplant
1 cup oil
3 egg
1 tsp salt
1/2 tsp pepper


METHOD
1. Wash the eggplant and pat dry with paper towel.

2. Prick the eggplant using a fork.
Lay down the eggplant directly on top of the gas stove and roast
(you can use oven also ).
Rotating occasionally, cook until slightly soft and the skin turns to black or charred.

3. Let it cool down then peel off the skin. Rinse with cold water.
With the back of the fork flatten the eggplant but leave the stem intact on it.

4. In a bowl beat the eggs season with salt and pepper

5. In a wide pan heat the okl in medium heat. Dip the flatten eggplant into the egg and gently slide it on to fring pan. Cook for 2 to 3 minutes each side or until it turns to golden.

6. Put into a plate with a paper towel to remove the excess oil, then transfer to a serving plate.
You can garnish it with spring onion on top and serve with tomato or banana ketchup.
